Head Chef
My client is a highly ambitious Hotel lying to the south of Inverness City. They are looking for an experienced Head Chef who has previous experience working in a Two Rosette restaurant.
Key Responsibilities
Source & develop local & national suppliers within budget.
Understand seasonal goods & their costs
Produce & maintain a high standard of food with a 2 rosette goal
Offer a high level of expression and initiative to all dishes
Preparation of draft budgets, monitor & operate cost controls
Plan, allocate & evaluate the work of the team, individuals & self
Set & update work objectives for the team & individuals
Implement, monitor & maintain energy & waste efficiency as per environmental policy
Identify & recommend improvements to energy & waste efficiency
Are You
Aware of current trends & fashions
Keen to produce a menu using local produce
